Dick, our founder, likes to refer to this as a "new classic". We take premium trout pieces; grind them with a peppery blend of herbs and spices and sheet out the mixture. Next, these sheets of Jerky are allowed to marinate, then they are briefly smoked, and then dried to a chewy portion of jerky utopia.
